Mexican Style Burger
INGREDIENTS
  1. 1 lb Mega Meatless Burger  
  2. ½ pound of vegan chorizo
  3. ½ cup crumbled queso fresco or cotija + more for serving
  4. ¼ cup fresh chopped cilantro
  5. 1 tablespoon of cumin
  6. 2 teaspoons diced chiles in adobo
  7. 1 teaspoon garlic powder
  8. 1 egg
  9. Kosher salt
  10. Fresh cracked pepper
Instructions
  1. Meatless Burger, chorizo, queso fresco, cilantro, cuminchiles in adobogarlic powder, egg and a large pinch of salt and pepper.
  2.  Use your hands to combine everything together, but be careful not to overmix. 
  3. Gently form 4-6 burger patties from the meatless burger mixture and set them aside. 
  4. Heat about a tablespoon of oil in a large sauté pan over medium heat.
  5. Toast buns in batches, placing the cut side down in the oil.
  6. Cook for 1-2 minutes or until the cut side of the bun is crisp and slightly golden brown. Set aside.
  7. Heat 1-2 tablespoons of oil in a large pan over medium-high heat (or heat a grill over medium-high heat and oil grates). 
  8. Cook burgers for about 3-4 per side, or until they form a dark brown crust on each side.
  9. Assemble burgers by spreading a thin layer of Avocado Sauce across the bottom bun. Then place the burger on top. Add additional toppings of choice.
